Your New Post-Workout Snack : No Bake Ayurvedic Kheer Energy Balls (Refined Sugar Free, GF)
I have been finding myself fantasizing about devouring a bowl of Kheer lately (a rice pudding treat consumed in India), especially on days when I have been more physically active and feel the need for extra fuel and sweetness.
However tempting it may be to whip up an indulgent dessert after every run or training session, I of course opt for healthier snacks, often in the form of the well-known energy ball. What I love about them is that they are so ridiculously easy and quick to make and pack on the go, as well as not requiring the use of your stove-top or oven in the blazing summer heat.
So in a sudden little ''blaze'' of inspiration, I thought maybe I can morph the Kheer into a wholesome snack, addressing both my craving AND my body's need for nutrient dense food in my post workout! So was born the condensed version of the dessert that I call the Ayurverdic Kheer Energy ball. On the nutrition front, they are packed with a good dose of one of the most nutritious grains, good fats and protein as well as being easy to digest. The consistency also makes it very satisfying and for me, the golf ball portion was just right to ease the little hunger pang without being too heavy. The rose water adds a little coolness to counteract the season's warmth, but is balanced by the more heating actions of the spices.
There you have it for my food fantasy turned ''clean'' through a little creativity! Now meet your newest energy ball variation :)
Ayurvedic Kheer Energy Balls
(Gives 10 balls)
2 cups cooked and cooled brown basmati rice with gold sultana raisins (Add 1/2 cup raisins to cooking rice pot)
1/3 cup unsweetened coconut flakes
1/2 cup almond butter
1/4 cup local raw hone or (maple syrup, if vegan) * optional
1/2 tsp ground cardamom
2 tsp rose water
1/2 tsp himalayan pink see salt, ground
Generous pinch of Saffron, for garnish
1/3 cup raw unshelled and unsalted pistachios, for garnish
1~ In the medium bowl of a food processor fitted with an “S” blade, process all ingredients except garnish until a sticky, uniform batter is formed.
2~ Using your hands, scoop batter out and roll between your palms to create 10 golf-sized balls.
3~ Place the balls on a parchment paper covered dish and refrigerate for 30 minutes.
4~ While the energy balls are setting in the fridge, place pistachios and saffron in a small processor bowl and pulse until coarsely ground. Add the pistachio mix in a large flat plate and set aside.
5~ Remove the energy balls from fridge and roll them into the pistachio mix until uniformly covered. Press the mix down gently with your fingers all around the ball to set.
Store in an airtight container and keep refrigerated up to 5 days.
Note: This is also a great snack for kids - they taste sweeter than they actually are!
